Slow Cooker Christmas Cake
Ingredients:
For the cake:
- 1 cup of dried mixed fruit
- 1 cup of raisins
- 1 cup of currants
- 1 cup of chopped candied peel
- 1 cup of chopped glace cherries
- 1 cup of chopped dried apricots
- 1 cup of chopped dates
- 1 cup of chopped nuts (such as walnuts or almonds)
- 1 cup of brown sugar
- 1 cup of butter, softened
- 4 eggs
- 2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground nutmeg
- 1 teaspoon of vanilla extract
- 1/2 cup of brandy or rum (optional)
For the topping:
- 1/2 cup of apricot jam
- 1/2 cup of marzipan
- 1/2 cup of icing sugar
- Assorted Christmas decorations (optional)
Instructions:
1. In a large bowl, combine the dried mixed fruit, raisins, currants, candied peel, glace cherries, dried apricots, dates, and nuts. Mix well.
2. In a separate bowl, cream together the brown sugar and softened butter until light and fluffy.
3. Beat in the eggs, one at a time, until well incorporated.
4. In another bowl, sift together the all-purpose flour, baking powder, ground cinnamon, and ground nutmeg.
5. Gradually add the dry ingredients to the butter mixture, mixing well after each addition.
6. Stir in the vanilla extract and brandy or rum (if using).
7. Pour the batter into a greased and lined slow cooker.
8. Cover the slow cooker with a lid and cook on low heat for 6-8 hours, or until a toothpick inserted into the center of the cake comes out clean.
9. Once the cake is cooked, remove it from the slow cooker and let it cool completely.
10. In a small saucepan, heat the apricot jam over low heat until melted.
11. Brush the melted jam over the top of the cooled cake.
12. Roll out the marzipan on a surface dusted with icing sugar, and place it on top of the cake.
13. Decorate the cake with assorted Christmas decorations, if desired.
14. Serve and enjoy!
